Something Sweet
I spent my day off work doing some much-needed baking. It’s been at least a month since I’ve baked and the first time I’ve had time in my new apartment. I made banana muffins, chocolate chip cookies, pomegranate cupcakes and peanut butter brownies. This my second time making the brownies, so I’m trying to doctor them up to wow me this time. They smell delicious, and I hope they taste just as good, or even better than last time.
Peanut Butter Brownies
1 1/4 C crunchy peanut butter
1/2 C honey
1 large egg
1 tsp vanilla
1/2 tsp baking soda
Combine all ingredients in a large bowl. Once it’s mixed well, spread into a pan lined with parchment paper. Bake at 300 degrees for 30 minutes.
I usually make a double batch to fill my pan and add extra honey for good measure.
